Gingerbread people

A Christmas classic with a twist! 

Inspired by the candy house of the Gingerbread Hag from Hansel & Gretel’s story, I decided to make a peppermint frosting to go with my gingerbread, * Disclaimer* it’s delicious.

Ingredients:

For the cookies:
• 1/4 cup vegan butter/margarine

• 1/2 cup brown sugar

• 1/3 cup molasses

• 1 flax egg ( 1 tbsp ground flaxseed+ 3tbsp hot water )

•  1/2 teaspoon vanilla extract

• 1 tablespoon nondairy milk

• 2 cups flour

• 1 teaspoon baking soda

• 1/4 teaspoon salt

• 2 teaspoons ground ginger

• 2 teaspoons ground cinnamon

• 1/4 teaspoon ground cloves 

For the icing:

• 3/4 cup powdered sugar

• 1/2 teaspoon peppermint extract

• 1 1/2 tablespoons non-dairy milk

Preparations:

• In a large bowl, mix the butter and the brown sugar.

• In a small bowl or a cup, prepare your flax egg.

• Add the egg, molasses and vanilla to the mixture of butter and brown sugar. Mix well.

• Slowly incorporate the rest of the ingredients to the bowl. 

• Form a big ball with the dough and let it rest in the refrigerator for a while, about 2-3 hours.

• Remove the dough from the fridge, split in smaller chunks and roll it out on  lightly floured surface.

• The dough should be about 1/2 an inch thick. 

• Preheat the oven to 350ºF.

• Cut the cookies to desired shapes and place them on a lined baking sheet. You can use parchment paper or a silicone mat.

• Bake for 11-13 minutes. When you take them out of the oven, let them chill a bit before moving them so you don’t affect their shape. 

• Once totally cooled off, you can get to decorating.

• For the icing mixing all 3 ingredients together, add more sugar or milk depending on the texture you desire. It’s a royal icing type of icing so don’t expect it to be fluffy. A thicker icing will be better for piping and a more liquid texture will be better for dipping or a drizzle effect like I did. The icing will harden once dry. 

• When everything has settled, store the cookies in a jar or leave them out as offering to the Yuletide beasts and visitors. Happy holidays 🧡
